I have what I'm assured is a very good, organic pigs liver kidney.

I have no idea what to do with it.
Not keen on poaching in milk but open to other ideas please.

Apols - should be kidney.

You don't have to poach it in milk, but soaking it in milk overnight before you intend to cook it will make the taste a lot milder.

Then proceed as with lamb's liver for making liver and bacon.

Dust with flour, fry in fat and serve nice and crispy if they are nice good fresh ones! Another good way is to devil them! mmm
