Road trip - advice needed!

Hi there venerable PH-ers!
Have booked various hotels on the continent in the following locations
Beaune - Turin - Riquewihr - Adenrath (for the ring) and Bruges.
The generic googlemap route is pasted in at the bottom of this post.
My question is - what roads do you suggest to take say from Reims (for the GP circuit) to Beaune, then Beaune to Turin and then Turin over the alps to Riquewihr?
All the other roads can be autoroutes etc. it's just I fancy doing a bit on the aforementioned roads early doors before her in doors gets really p*ssed off getting chucked around in the passenger seat!
If I had to really narrow it down I would sacrifice all other roads for a decent trip over the alps; by that I mean twisty by all means, but still a bit quick so we can have some fun (in my E46 M3). I have just read that the Stelvio pass for instance is too twisty/steep etc. for a real blast so that's where I'm coming from. I know we don't go near the stelvio, but you get the gist?
Additionally, what along the route is a 'must see'? I have read about various motor museums, but am getting a bit over faced by it all!

Ps - going Easter weekend for the week (5th-13th April) - need to think about what routes through the alps will be open too!
