Anyone on here using a WSM?

My old BBQ is dead, and I've replaced it with a 57cm One Touch. I did some smoking on the old one, but the new BBQ isn't really big enough to cater for parties, so thinking of getting the WSM to go with it.

Just wondered who else is using one, and what they think of it?

Funny you should say this, I too have recently bought a 57cm one touch and have used it 3 times already this year with much success but yesterday tried to fit a beer can chicken under the lid and it would go in so had to lay it down and smoke it without the beer instead, very disppointed I was. I too have been thinking of buying a WSM to go with my 57cm and gas BBQ, so glad we have a large deck area lol

i built my own.

I had a spare Webber 57cm and was wondering what to do with it. My main Webber One Touch does everything I want and is IMO the best BBQ you can ever buy.


Cutting the top and bottom off the barrel (I ended up cutting some of the height off the barrel as well.




A 55 Gallon drum is the exact same circumference as a 57 Webber. I cut a crip of steel from the offcuts of the barrel and bolted it inside of the lip of the lower webber case. The lid fits on perfectly as if it was made for the drum.




Spare grill and existing grill are suspended on bolts fixed through the barrel.



Now I just need to cut and hinge a door, and paint it BBQ black.

I tried it 2 weeks ago and it worked a treat, just need to make some stabilising legs and paint it.

Total cost, what the original webber cost and the paint.

Yep, I got a WSM about 2 years ago. It's bloody awesome - i've had some of my best outdoor meals as a result of it! Even cooked the christmas ham in it. I've also got a cold smoker that I put in it from time to time.

I think that as an addition to your normal weber it will be an absolute winner - i've even got a few recipes where having the two running together would be very handy! Buy one, I don't think you'll regret it.

Cheers all.

Going to head over to a Weber showroom at the weekend to see which size I need. And which accessories I'll need with it, because obviously I'll need to get something while I'm there hehe

I got a WSM a while ago as well and swear by it, it's true BBQ! What we call BBQ here is actually Grilling where as smoking is BBQ in its proper form. Once you get the hang of it, and it will take time to master, there's no going back! Try Dawsons department store as they have 21% off at the moment http://www.bbqworld.co.uk/bbqworld/products.asp?pr... I have used them many times and they are great on service and price.




I have the 47cm which is big enough for most situations as it has 2 shelves, the only slight issue is that it is a specific bit of kit for smoking and not grilling so you will need another Weber to grill on. But then again its great to have the excuse to have more toys!!

The price has gone up overnight - I ordered the 47cm at £276 yesterday with free delivery (it has apparently arrived at home and is ready for some assembly tonight smile).

Had a first attempt with it yesterday. Regulating the temperature properly is going to take a bit more practice, but even so still pretty pleased with the result - played it safe with ribs and a chicken:

The finished product:




What hadn't crossed my mind was that the skin of the chicken was pretty much inedible, but otherwise good.

Looks like a good first go, how long did you take to cook the ribs and chicken? For future reference I would keep the poultry for a separate day as it doesn't benefit from the long and low cooking technique as much as say ribs/ brisket etc. keep up the good work!!!

Ha, no the chicken was attacked with the Global knife to the right of the bird wink

I actually thought the chicken was fantastic - OK the skin was pretty limp and horrible, but the meat was incredibly moist and took on the smokiness really nicely, with a bit of heat from the rub.

Brisket and pulled pork are next on the list.

Looks fantastic, but you want to get the rotisserie for perfectly cooked chicken on the bbq.

Thanks for sharing all the info about the Weber Smokey Mountain. Do you guys get much use out of it over winter?

I guess thats when it comes into its own compared to a bbq over winter.

I haven't used mine over the winter, no. I've found that when the ambient temp is low, it struggles to maintain a constant smoking temp without me there to tend the fire continually.

That said, it won't be long before it's back in action.
