i did do the Ferrari day at thruxton some 12 years ago, did the ferrari, porsche and single seater and was pretty good.
i remember the single seater being miles better than the other 2.

I did one at Silverstone 'stowe' circuit a few years back.
Well worth it as little compares to a proper single seater race car. Gearbox was horrible (more to do I think with the linkage) and clutch was awkward so much hilarity in getting going.
IIRC (and there is a possibility I'm confusing this with another driving day) the rules were you were only allowed to overtake on the pit straight (IIRC you had to give way if the blue was waved at you), weren't to take it over some arbitrary rpm but apart from that were allowed to GLF.

As above really, the supercar thrills are more for you to be able to say you've driven a Ferrari,Lambo etc, not to give them a total thrashing. Would you let a stranger thrash your car for £100? Don't thinks so!
The Silverstone single seater is the best I've done and the rev limit is only a marker, I was on the last shift light on it, agree about the gearchange it was a nightmare on mine, it happened on the slow sighting laps so wasn't me trying to be too eager, as can be seen on my vid here.

The best one I've seen but not done myself is at Bedford but I think it's about £500 but by the look of it well worth it. I think it's pretty much a whole day of driving different cars, here's a clip of Porkie off here.
