Just fitted stainless steel outriggers well pleased with the results.
Bit of a hassle but never need to bother again.
Will have some better pics if I can learn to work an Iphone!

having had 28 years experience in fabrication and welding in mild steel, stainless steel and aluminium I feel that I should point out that okay, you can weld mild steel to stainless, BUT, what electrodes or filler wires are you using, if welding different metals, in this case stainless to mild then you must use a rod suitable for the purpose, a dissimilar metals rod to suit the 2 parent metals is vital, otherwise your welds will start to fracture.
as for shielding gases, if mig welding you need the right gas for stainless, argon will do but tends to make the weld to hot, contact your local supplier, he will give the correct type, as for tig welding, which is much neater than mig, pure argon is the correct gas, just as much heat can be applied with tig, if not more than some mig sets, but I`m not talking about the little diy type machine though.
just my 5p worth, I`ll shut up now

Does that mean the main original chasis will act as a sacrificial cathode?

Oh yes. If it is kept very well covered by paint, in theory it won't happen but this isn't a perfect world and paint chips etc.

I'm in the trade (not motor engineering)
In short:
Outriggers cut back to good steel.
Solid bosses turned out of EN8 grade steel with and interference fit.
New outrigger fab'ed from 316L s/s.
All fitted together and TIG welded out.
Pure Argon sheilding gas.
Filler rods with a high Nickle content.
We use this prosess in the work we carry out in the off shore oil field work we do.
Should have more pic this week end.
Cheers

The whole chassis could be fab'ed out of s/s like the SEAC in this months sprint.
Also quantum sports cars in Devon use a s/s chassis.
