What 14" tyres?

I've got 185/60/14 on my MX5. It requires V rated tyres and there's only two premium choices. Yoko Advans or the Michelin PE2s I've got - they're a good, if pricey, tyre.
H rated and there's loads of choice still available. Heard good things about the Dunlop SP Sport Fast Response - but had no personal experience.

Maybe a stupid question but why does it need V rated tyres when you most likely wont be going that speed? The fastest I go is 70mph so I'm not bothered about rating, even the lowest rating is higher than 70mph, right? H rated and there's loads of choice still available. This. Both the manual and the sticker on the door specify V rated for my 01X MkII. I'm sure H would be absolutely fine for normal use but there is no concrete proof anywhere that you can downgrade the manufacturer's spec.
I believe H rated were the approved spec on the MkI.

This issue has come up a few times on here and there no-one (even the people who work for insurance companies) knows of a claim being refused. Winter tyres are almost always H rated - my car (Merc) has a setting in the cluster to limit the top speed when H rated winter tyres are fitted.

Its given me a lot to think about, the yokos sound a good bet, I have yokos on the 15s I have on at the moment and they are very good. I have also been looking at yoko A048R but I think they might be a bit extreme for road use and at £100 a corner a bit steep.
Also the Dunlop could be an option, I've never had Dunlops before. I have Toyos on my M3 which are nice but don't last very long. Would they last a bit longer on the Eunos as it is much lighter?
