Can someone recomened a nice hotel out of the way and with good views etc somewhere between Pau and Marbella? Maybe around Pareja/ east of Madrid?

Not specifically, I only know ones further south. but you can't normally go far wrong with a parador. See http://www.parador.es/en/portal.do

Look up the NH Principe de la Paz Hotel in Aranjuez
