1.7kg beef roasting joint
1.6kg stewing vegetables
up to 5kg potatoes

Do I just throw everything in the slow cooker with some water or stock and cook for... how long?

Red wine.. Throw it in with red wine and don't. forget put the mushrooms in towards the end

All red wine instead of water/stock? If not, how much of each?

How long should it cook for (and on low, i guess?)

I'd sit the meat on a trivet of celery, onion and carrot (with a bay leaf plus a few peppercorns) and 'roast' it dry.

Quite a bit of juice will come out of the meat, however keep an eye on it and moisten the base with red wine if necessary.

Cooking times in the slow-cooker are a tad imprecise: 'until it's done', I'd say.

Would be tempted to brown the meat and veg (and maybe fry off some bacon too) first. Some whole peeled shallots and garlic too.

Spuds in a pot roast take on a lovely flavour if left in for hours (Simon Hopkinson's chicken with bacon, thyme, vermouth and potatoes is fab).

Must post a picture of my 1.5kg beef fillet roast sometime.
