Help! What Is This Roux Recipe ("Pommes du Chefs"?)

At long last I'm catching up on some Sky+ recordings, specifically "The Roux Legacy".
Currently watching the episode featuring Alain and Michel Roux cooking "Beef en Croute".
Michele makes some little potato cases from baked potato, pressed into a tartlet case with piped sides, filled with cauliflower puree. Having paused / rewound this bit a few times, it sounds like he's calling them "Pommes du Chefs" but I'm obviously mishearing it as Google has not heard of such a thing and it's helpfully not mentioned in the recipe (http://uktv.co.uk/food/homepage/sid/9095/arp/2#asr).
Does anyone have the recipe for such a baked-potato based tartlet?
