Yes. Basically we're using an external provider to add data about the car taken from a VRM (reg plate) look up. So if DVLA records the car as being a black M3 coupe with auto, then we'll be able to let you search using those criteria. The caveats (and it can never be a 100% precise science) are if a different reg plate is supplied in error, or perhaps if the car is coming off a private plate and DVLA hasn't yet caught up.
Our data is VERY accurate for cars <3 years old. Older than that and there will be gaps, but sellers of cars have the ability to very easily change or fill in the gaps, so it should be good enough to give you what you need.

Yes, so the colour classification comes from SMMT and is an aggregation of what the various different manufacturers might have under, for example, "silver" as a general description.
However as you say there's a keyword search as well, so if the seller has included the precise variant then you can use that.

My wife is finally going to learn to drive but she only wants to do it if she can have an auto box so I am after a Mini Cooper, on a 07, 57 or 08 plate in Pepper White or that dark Grey (not sure on the official name), preferably with Chilli Pack and possibly Visibility Pack as well.
As of right now, there are 8413 cars against which we have a colour recorded as grey. Not many of them pre-date the year 2000, which just goes to show that we're going to do better at finding a grey E90 M3 than we will an E30, but that's just a limitation of the available data, rather than the site.
