Toasting a massala, as the oil comes out of the cumin/coriander seeds

Actually come to think of it, toasting pine nuts for pesto make a gorgeous, if subtle aroma.

wherever I am the smell is so distinct. Stops me dead in my tracks, its so evocative and gets my mouth going..

Caramelising onion, smell reminds me of childhood.

The alcohol/wine smell when deglazing the pan after.

Vinegar, cider being a favourite.

But the winner has to be the smell of beef dripping in the chippy.

Bacon, clearly.

Fried eggs cooked in butter - just smells lovely.
Stinky washed rind cheeses - because they smell kind of wrong but you know it'll taste great
Fresh bread especially those sundried tomato and herb bread mixes
Decent whisky - it's just so complex and satisfying
Wild garlic - especially when driving with the windows down through woodland
Chilli Con Carne - if it's been made with masses of herbs, spices, wine etc
