For various reasons I have only covered around 1,500 miles in the Griff since the last service a year ago.

Options:
1) Service regardless and to hell with the cost.
2) Wait for another year and service at around 3,000 miles.
3) Find someone who will do a 'Service Lite' relevant to the mileage.

Thoughts?

Would not feel safe driving my TVR for more than 3 months without going on a lift wheels off good look around, bit of clean and lube
low mileage makes some things worse
would say engine oil is shot, brakes need good look at, things like belts dont like this kind of use

I went through the same thought process given very limited use. Mine is now at Track v Road having a light service. Very little real difference but saves a few quid. I wouldn't skip anything which could damage the longer term condition of the car as I am very picky. I would ring whoever you use for work on the car and discuss their recommendation, I went through the service schedule with TvR to understand what was included and excluded and very happy in the end.
