Trying to choose?

Hi all, need some help.

I live in Canada and have a budget of about $50K (so let's say £30K) to spend on a kit car, over 2-3 years. I want something that looks great, is fast, but more importantly (so SWMBO approves) can be built with a very nice interior. My current list is something like:

1. Factory Five Daytona Coupe (Type 65)
2. Some sort of GT40 rep, not sure if I can do a good one within budget?
3. Factory Five Cobra

Does anyone have any experience of the above?

Also I am crap with spanners, will I be able to do it?
