The why and what of mysterious matter around gear lever

Am currently passengering whilst my wife hits 0.8 leptons for first time, her first motorway drive, really impressed with her driving which is affording me the relaxation to consider the source and nature of the matter that collects around gear sticks in cars.
What is it, why does it collect there? Have had it in all my cars, so clearly I am not a fortnightly kds customer, would post a pic but just removed it all with a baby wipe.
If it returns before the m3 runs out I'll photograph it.
