ETA: I'm sure you know what you're doing, but do bear in mind the cam chain change due at circa 100k miles. Big job and worth factoring in.
And then check for rust everywhere - wings (inner and outer) around the screens, lights, sills, etc etc.

The other people that seem to "traffic" in BMW's like this are Classic Heroes www.classicheroes.co.uk I've never used them and no experience of them. I think they were set up by some ex Munich Legends people.

Classic Heroes is owned by Tony Halse AFAIK so yes, he's the former owner of Munich Legends, I'd imagine both companies would be worth having a chat with. 
Very jealous of your plans, just picked up an E36 M3 frm Munich Legends, have to say their service and knowledge is excetional. I swear they have clocked how I've looked at other cars in the showroom and know I'm going to be a sucker for another deal at some point... LOL

there is a guy on the m5board, think david is his name, based in suffolk.
think he is quite good at finding m5's i believe he advertises on car and classic, and always seems fair.
i may look into another e34 m5 next year, and would contact him.
i bought my old e34 from 4starclassics a couple of years back, can't fault the service, but think their prices have risen a fair bit.
