What Meal To Cook A Friend??

Evening All
A friend of mine has been really down in the dumps lately so in an effort to cheer her up a bit I have offered to go round and cook her dinner one night. She makes me dinner every so often so its the least I can do.
The main stipulation is it needs to be chicken. She doesnt eat red meat and can be a little funny about other things too. Oh and there can be no tomatoes. We are both allergic to them!
So, what would be a nice chicken recipe to cook up? What can I do with it?

My chicken speciality is chicken souvlaki, it's greek (would more often be lamb but chicken is served all over and is gorgeous) so you can download some cheezy Zorba music to play while cooking it for extra cheese factor!

Agree on the Parma ham - maybe shove some blue cheese in the middle too. Then serve with Broccoli.
I can't say gentleman's relish for afters would EVER be my idea of fun!
