What is the difference between quote and quote all?

I don't get it. Doesn't matter which button I press it only quotes the post I pressed the button on. How does one do multi-quoting so I don't have to copy and paste people's replies into 1 post or make umpteen individual replies?

Quote All is where you are Quoting where there is already a Quote in the post and all the levels will be retained.

Using just Quote - will remove the previous nested quotes.

Yes - you click quote, cut and paste the message box and construct the thread with each cut.

There is no such 'function', you must intrigue a copy & paste method to suit your desired outcome(s).

Also worth noting that if you click on 'quote' rather than 'quote all' to quote a post that has two blocks of text separated by a quote in the middle...

Yes I found that out a while back, but didn't realise that quote all 'fixed' it, I just thought it was a bug!

Actually, talking of such quoty things, why does the mobile site only allow 'quote' just wondering, rather than a criticism? Will the mobile server explode?

I think that's been listing on the mobile site wish list. Also from memory the mobile site is a 3rd party application/connection to PH so not all functionality crosses over.

That's a symptom of the 3rd party refusing to extend the 4seconds timeout - so when PH is busy the PH mobile request times out - so I am informed.
