What makes you think that? 
SEAT's are fine average cars. There is nothing especially wrong with them, although (IMO) they are no better than the vast majority of car makers. I apply this to all VAG products really. Such a shame the UK general public seem to revere them as though they are miracle workers.
Afraid I can't offer specifics (but I think you'd get a better response for those in a non general forum, as people in other part of PH will know the cars better).
I would say check all electrics, check for suspension clonks and similar. At this age and mileage it's a prime candidate for worn bushes and suspension components. Check for accident damage and over spray. Check the motor sounds sweet with no clonks or rattles and that it revs smoothly through the range. Check for smoke, some black is ok, white or blue is not good though (don't confuse steam with white smoke though).
Check the trim, I'm not sure about the Leon, but a friends Ibiza wasn't 100% robust on the interior department. Make sure the clutch and gearbox are smooth.
Injector recalls. Check if it has a DPF, if it does RUN AWAY! Check the central locking works.
A friend had one, hers was always suffering DPF problems (she does motorway miles and doesn't hang about, ideal DPF conditions and it still crapped out every 3-4 months). Was a bit better after the injector recall. She had serious issue with the central locking, either it wouldn't open, would lock, or randomly unlock when parked.
She now has an Alfa Uma Thurman, and it's been more reliable.

56 plate is presumably the PD rather than the CR engine? A few people have had injector, dual mass flywheel or diesel particulate filter problems, but they're no where near as common as the scare mongers will have you believe. There's some good Seat/VW/Skoda forums around if you want specific details on such problems.

On the other hand we've had an 08 FR170 from pretty much new and aside from the injector recall have had zero issues over the last 50'000 miles. Not sure how you can state the entire production run are crap following only 1 example. I've heard countless horror stories about Porsche, Mercedes, Audi, BMW, MINI - are you saying because I've heard bad stories about those that I should run away from them as well?
