Now the weather's getting warmer and humiderer, all the mank of the previous year's use is for some reason making a bid for freedom.
What's the best thing to do? I'm just cleaning it off with wet wipes.
It's leather and suede/alcantara

Suede steering wheels look nasty very quickly. I'm told they are only meant to be used while wearing driving gloves, for this very reason.

Don't know what to suggest you should clean it off with, but if wet wipes work then carry on.

Horsey products like saddle soap might work - shoe shops sell suede cleaner in spray cans.

Autoglym Interior Shampoo, spray a load on to a lint-free cloth and watch in amazement/horror as years of dead skin gunk come off. Good for door cards, headlining and so on.
