Morning Folks,
I decided the other day to cook a Rick Stein recipe called Vit Nau Cam (Duck Braised in spiced orange). The recipe is for 6 people and calls for a 2.5k duck jointed into six pieces - there is only 2 of us and its one of a few dishes so without really thinking about it i just bought a couple of duck breasts.
The recipe says to cook the duck for 1.5 hours in the spiced orange.
Now i am wondering whether that's going to be far too long for a couple of breasts? What should i do?

cook it for less time!
The recipe is for braised duck, so I guess the duck would be jointed into portions with the bone, that will then be braised.
If it was me I would make a spiced orange sauce and cook the breasts separately to ensure that they are cooked correctly. Spoon the sauce over and serve.
