PH Cooking Comp #24 Moroccan

Okay....
This months cooking comp is Moroccan food. No hard and fast rule, traditional or inspired it doesn't matter. Moroccan food is amazing in any form.
Tagine, Falafel, kebabs, salads, soups!! mmmmm......I can taste 'em now.
So, how about it??
As per usual, 3 pics only. Closing date is Monday 30th July..

Bah - amateur! Out in rural Morocco people don't have kitchens. Flatbreads are baked on a skillet over a brushwood fire, and tagines slowly simmered over a charcoal brazier.A shame though as a good choice which I am sure will harvest some tasty dishes.
It's the ultimate in portable cuisine. Out in the olive groves near a village I stayed at, I'd catch a whiff of something smelling lovely. Got closer and saw it was a tagine for the workers' lunch.
A true tagine needs a good pound of sliced onions. The meat sits on that and steams in the juices released from the onions - and nothing else. Veg are added at around four hours in to a good six hour cook.
Grrr - hungry now.

I really enjoyed making this and using only 3 pots saved on the washing up. I will be making this again, perhaps with more apricot next time - was delish as it was though.
