Recipe Assistance - Coconut?

Morning all

Languishing in the bowels of my fridge freezer are a couple of whole coconuts , theyve been there a few weeks and need to be used.

However having looked through my assortment of cookery books and a quick sniff online im struggling to find a recipe that uses a whole coconut - theres lots of recipes using coconut milk/cream but this isnt of much use.

So open to the floor - share some ideas with me.

I'd crack both, and eat one as is. Fresh coconut is deeelish!

I'd shave the other into thin strips with a potato peeler and toast these to garnish Thai-style salads and creamy curries.
