Cheap, easy, and tasty BBQ

Well, I am hosting a BBQ for a few mates on Saturday night (providing the weather holds off for a while), and I would like to try something new.
Will do all the usual stuff - burgers, sausages etc, but I want to do something a little different as well.
I am thinking steaks (small ones) that have been marinaded? My godfather came over from Barbados recently and made an incredibly simple marinade that tasted brilliant, think it was just BBQ sauce, tikka paste, mixed herbs, onions, and some lime.
Only problem is, we don't have a fancy BBQ, yet. It is just a charcoal half barrel thing with a grille on the top. Does the job, but eliminates the possibility of altering temperature / smoking stuff etc.
Simple and tasty is key!

My local butcher always has a few interesting BBQ bits pre-prepared at this time of year. He does excellent, kebabs, marinaded pork steaks and lumps of chicken.

Two old trusties I always use for "BBQ Starters" -
1. Asparagus wrapped in parma ham. Leave the top bit of the asparagus poking out. Takes about 2-3 mins each side.
2. Citrus chicken skewers. Cut large cubes (2cm) of chicken breast. Bung in the fridge overnight in a marinade of fresh orange juice, lime zest and squeeze of lime, lemon zest and squeeze of lemon, dash of tobasco and good glug of dark soy sauce. Soak some short 6" wooden skewers in water then put 3-4 chicken cubes on and give them a good 10 minutes rotatig them regularly.

I love ribs! Slow cook them first (So they're tender and fall off the bone) and finish off on the BBQ for crispy/sticky/BBQ taste.
Mix ribs with a big bottle of BBQ sauce, 1/3 as much orange juice, sliced up onion, sliced up chilli or 2, some honey and some bourbon if you have any.
Either slow cook for 6+ hours or chuck in the oven, covered at about 120c for 3hours.
Whack them on the BBQ and baste with the sauce as you flame them. There's normally tons of sauce so I thicken it/reduce it and cover everything else in it (including myself). Drink beer and enjoy

Mix soy sauce and honey to taste (usually 2/3 soy to 1/3 honey and enough to completely cover the steak), add grated ginger, quite a lot and a clove of crushed garlic. If you like them, a few crushed chillis. As the marinade is strong you can get away with as little as half an hour, but longer is better.

I did both of these, my god they were incredible! Went down incredibly well, and I will be doing them again in future, along with a few other from this thread.

I cooked this for friends this afternoon; an absolute success.
Easy, cheap, impressive to look at.......what more could you ask for?
I put the meat in the marinade overnight in the 'fridge' and the result was superb.

Rack of spare ribs, trim the skirt off, remove the membrane.
Dry rub (loads of recipes on t'internet) and leave it to soak in for 24 hours.
Oven bake under foil for ~3 hours at 100c with a cup of pork/chicken stock in the bottom of the roasting dish.
Then chuck them on the bbq for 10 minutes or so a side, mopping with bbq sauce for the last 3 minutes or so.

+1 to the butterflied leg of lamb; +1 to ribs (lots of view on how to cook them before they go on the BBQ; I prefer a long slow simmer in a mix of apple juice, pineapple juice, beer and water).
Also pork shoulder, rolled in flour, mustard powder, rock salt and pepper. Sear the outside in the first 10-15 mins, then a long slow cook.

Very simple. Works very well on chicken too (especially thighs). I tend to up the honey and coat in sesame seeds on chicken.For pork ribs I make the same marinade but with a heap of Chinese 5 Spice powder, voila, sticky Chinese ribs!
Get a chicken, spatchcock it, marinade overnight in a sauce of your choice, cook for one hour on low heat (assuming you have a gas bbq!).

About to try this now!I tried it again on Sunday with some spare pork chops and it worked a treat. Poured the remainder of the marinade over the chops as they were on the BBQ, fantastic
