Challenging dinner recipes

My old man is really into cooking and I usually go to his for my big birthday dinner with the family (birthday's at the end of this month). A few years ago he made shredded crispy duck pancakes, crab money bags and spring rolls etc. It was so good I asked him to make it again last year.
This year he's said the same - he'll make whatever I like. Cooking is his hobby and he knows his stuff so really, rather than ask him I'd like to give the PH cooking hobbyists the floor.
Potentially three courses.
What I love:
- Meat. Chicken, beef, hot sausage, everything!
What I don't like:
- Most seafood
- Veg
Seen some fantastic stuff getting prepared on here and I've been working my way through the dinner thread but any ideas would be great guys, cheers
