Can you use any ex race car, providing it meets regs?

Not sure what you're asking, tbh...
Most trackdays allow saloon racecars provided they meet the noise criteria, but they aren't intended for testing and the rules of the day (pass on the right, by consent or whatever) still apply. However, the point of a trackday is to be able to drive *any* (usually roadgoing) car on the circuit without speedlimits or oncoming traffic.
It sounds like you either have or are planning to buy an ex BTC car. These are very specialist cars...although they look like the roadgoing equivalent, they have little in common with their mass-produced brethren...The shells are seam-welded, strengthened and lightened and have never seen normal suspension or engines on them, nor any regular electrics, interior, etc...A very expensive way of getting on the track and if you can afford to buy and run one of these you should consider going racing in something like Britcar or the TinTop series...
