So if I SORN my bike when the tax is next up and I leave it on my property, what is the procedure if I suddenly want to tax it for the road again.

Providing it still has an MOT, you go to the post office with the log book, MOT cert, and insurance details.

If you go during the month, your tax disc will be backdated to the 1st of the month. You can tax at the post office on the last two days of the month to have your disc post dated to the 1st of the next month - although you can't use your bike in the meantime.

If you do the above online, you can get a post dated disc up to five days before the end of the month.

Yup, you can do it online from say the 26th of the Month, and the DVLA will post you out a disc starting the following month.
