I'm 50/50. Half of me wants to be outbid, half of me hops my high bid wins. But, i've had the high bid for nearly 3 days now, so assume im probably gonna win.
Need to stop bidding on things thinking "its ok, i probably wont win!"

Seller sounds like a massive throbber.
Before he even says anything about the car, he tells you, angrily, that you MUST collect on a particular day even though he won't be around for the first five days after the end of the auction. So it's okay for him to have other plans, not okay for you.
I still think it'll go for more than £5k so unless you're planning to increase your bid, or you're only just the top bidder, I don't think you have much to worry about. That said, everything goes crazy in the last few hours of an auction, so don't be surprised if you're still on top even an hour before.

Well, it's his car. If you don't like his terms, don't buy the car. I have to say I am getting pretty fffed off with Ebay at the moment. If I am allowed to select that postage will be within 15days why the f
k is it some prat who won my auction can start kicking up a fuss and reporting me within 6 days. OP it's not such a specialist car that you will have difficulty selling it on again if you do win for sub £5k.
I dont know how far off parkers guides are but it says poor private is about 8k.
