right, so i've got this cooking bug for some reason.
i'm going to try some jerk chicken today, the problem is the mrs doesn't do hot and spicy.
any recomendations for a marinade? she is saying along the lines of a jack daniels type sauce. any ideas, bearing in mind i'm a novice. thanks.
i'm going to do the dish with rice, and the peppers and red onion in red wine vinegar again as that was very nice.

Olive oil, balsamic, dried oregano, garlic, salt, pepper, twist of lemon.

Probably 3:1 on the oil / balsamic and everything else to taste (I like lots of oregano). Try leaving it for min 3 hours.

Woks on the bbq, grill or griddle pan.

Try this marinade for savoury yet subtly spicy chicken, especially on the BBQ. It seems odd but really works:

200 ml olive oil
1 tbs smoked paprika
1 tsp chopped fresh rosemary
1 onion, grated
1 tsp salt

Mix well and marinate overnight. Cut slots in the meat, and push the marinade well in.

Very simple but very tasty,harrisa paste,clear runny honey,salt pepper,mix well and taste.
OOPS didnt read the op,your good lady doesnt like hot and spicy.
