Has anyone got a good trout recipe they are willing to share

Slice some sweet potatoes into wedges, coat in olive oil and Worcestershire sauce, season and then bung them in the oven for half an hour.
Meanwhile, juice a lemon and orange and chuck in some parsley (fresh is best, dried will do mid-week) and a few capers... Pan-fry the trout whilst plating up the potato wedges, whilst plating the trout deglaze the pan with the citrus juice mix before spooning over the fish.
A bit of broccoli adds a nice bit of green to the plate and soaks up the juices well!

1. En papillotte
Make little parcels of greaseproof paper with whatever aromatics you fancy - dill and lemon / Asian flavours / herb butter etc - and cook in a moderate oven for about 15-20 minutes. Open and eat from the paper with new potatoes and salad.
2. Smoke them
On the dying embers of the BBQ, throw a handful of soaked oak chips over the coals, stick the fish on the grill, and whack on the lid for about 20 minutes (check after 15) until the fish is opaque all the way through.
You can eat the fish as is with rye bread and dill pickles, or mash it into a pate with some creme fraiche and a bit of horseradish sauce.
