Sous Vide cooking

I heard of a nifty way of doing it...
beer cooler cooking, works quite well to test it out.

Even Thomas Keller did a piece in the LATimes on it.

I thought the same, but once she'd tried a few SV dishes I cooked she accepted the 'science-experiment-on-the-worktop' look!anonymous said:

Recently swapped out my slow cooker/PID setup for a Sous Vide Supreme Demi. Very happy with it so far. The build quality comments probably come from the fact that the metal used for the outside of the machine is fairly thin, so it doesn't feel as 'solid' as you might expect. But in terms of maintaining temperature and ease of use, it's perfect for what it is and I'd recommend them.My original setup is now sitting here doing nothing and I was thinking of putting it on ebay, but if you want to dip your toe in the SV water...
As an alternative this guy http://www.ultrafresh.eu/ does a couple of models. Not pretty but I have one of the bigger stirred ones and it's very good. The heater element packed up on the first one but it was replaced without question in a few days which I thought was pretty good. I'll probably buy another one soon so I can run two temps at the same time.
The smaller one might be better for home.
