Spotted a load of pickling onions on the market this week so currently have my first batch peeled and salted waiting to be covered in a vinegar concoction tomorrow.

Will probably go with Malt vinegar boiled with lots of sugar, assorted peppercorns and dried chillies.

Will be putting a few halved fresh chillies in the jars with the onions and then cover with the vinegar, seal and leave 'em, the hardest part, for at least a month. Back of the garage normally so at least they are out of sight!!

I am now staring at a butternut squash and thinking it will make an excellent spiced/curried chutney, recipe to follow when I come up with it....

Any other suggestion for pickles and chutneys????

Red onion chutney is the king of all chutneys imo.

Lime pickle would be an interesting one too.

O/T, but, three spaces in a username has to be a PH record?!
