Right, I've got 25 (!) chicken breasts here, as I'm starting to ramp up my existing protein intake (as well as eating a bit more 'clean')


I'm looking for some inspiration on how to cook them, bearing in mind that the aim is to take it to work with me pre-cooked - although I can use the microwave at work to re-heat if required.

I also want to avoid drying out the meat, as one thing I really hate about chicken breast is how easily it becomes dry yuck


So, ideas?


(mods, I realise this is technically a "food & drink" question, but I also want to get the opinions of fellow fitness fanatics & gym rats smile )

Tear off a square of foil (enough to parcel the chicken).
Freshly ground pepper, dried chilli flakes (or diced fresh chilli), chopped garlic (sprinkled on foil.)
Add breast.
Wrap / parcel (fold around chicken and crimp above it (so juices stay in parcel and chicken stays moist).
Cook @ 180c for 20 minutes (25 non fan assisted).

Do two or three of these at a time and you'll have a 'spare' that you can refrigerate and eat as a snack the next day.

Grill, slice and mix with mayonnaise, spring onion, some sweet corn. Makes great sandwich filling or good on its own if you're avoiding carbs.
