Rallying.
So many more variables to take in at high speed, while listening to the bloke next to them belt out the notes. I heard a stat a couple years a go saying a top rally driver processes more info and does more actions than a jet fighter pilot in a dog fight per minute!
Roundy, roundy drivers are of course amazingly skilled, but they get a lot more practice!

a bump up the back of the other fella,no skills there.

As much as I appreciate a good rally stage, there was a video posted comparing endurance GT cars and F1 cars going through Eau Rouge. Impressive does not describe it.
As I said earlier, they are all different disciplines, so center on different things. F1 is about precision, high top speed, cornering at daft MPH, g-forces, open wheels, and so on, but on a repetitive circuit...
Rallying is about control on various surfaces, sliding about, and doing all that at a lower speed, but in amongst some treacherous environments, all at the absolute limit of control, on non-repetitive stages.
Touring cars probably the lesser of these. Slower, and repetitive, but can be equally as entertaining. A bit more boshage as well, which can be viewed as good, or bad.
Endurance racing. Repetitive, but absolute stamina, and operating at as high a level as you can for hours at a time. High speed, high risk, (multiple classes on the same circuit), and some utterly daft machinery at the top level.
It is hard to pinpoint.

However, if it is for a breadth of talent, all surfaces and conditions, then it is Rallying for me. But then they don't have any wheel to wheel racecraft.....so I'm going to compromise and say Rallycross
