pigeon recipes please.

have just got 8 pigeon breasts and not wanting to ruin them, i need a bit of help.

Im guessing pan fryed is the best way to do them, its the only way im going to be able to do them, as my ovens not working but have a hob.

what goes well with pigeon?

season,pan fry, rest for 5 mins,rocket salad, fresh raspberry dressing, yum yum

Pan-fry them in a bit of butter, and rest on warm plate. Bung in some red wine and a knob of redcurrant jelly to the pan, and simmer until syrupy.

Bitter leaves like endive go well with pigeon, as does bacon, black pudding, chestnuts, and red cabbage. Anything 'autumnal', really.

ah yes, hadnt thought of the shot issue till now, didnt end up doing it tonight, tomorrows the day.

Could I just shoot ( or otherwise ) kill a few from my garden or local wood and eat them ?

not unless you can assure the pellets/shot doesnt go anywere near where there could be people, even tho there are no people you have to think 'if there could be'

unless its private land, as i dont think shooting something out of the trees in your garden is legal, as if you miss, wheres the pellet going to go?

Get a dog instead smile My parent's springer spaniel is quite adept at catching things. In the couple of years they've had him he's managed to dispatch 20+ rabbits, numerous woodpigeons, a couple of magpies, a dove, and a cat.

Yet he looks so innocent...

I was recently given some pigeon breasts from a friend who had shot over a 100 on a farm with some mates, his cut was 17 I had either 5 or 6 cant remember.
Take a red onion and slice, pan fry in a small amount of oil and some butter.
Add a small amount of Maple syrup and caramelise.
Open a bottle of port and splash a load in and reduce.
Slice 3 chunks of bread and toast.
Add the pigeon and pan fry turning occasionally – don’t over do it you want them pink in the middle.
Butter toast, add onion on top slice pigeon after resting and put on top, sit with the rest of the bottle of port, consume and then don’t move for the rest of the evening !
I was supposed to share with Mrs Coneyhurst but she took a look and decided against it.



Not the prettiest plate but it was fantastic !
