Preheat the oven to 425.

Take 4 to 5 pounds of broccoli, cut into florets (but relatively big ones.) Here’s the key that she doesn’t mention in the recipe: dry them THOROUGHLY.

Put the broccoli on a baking sheet. Toss with olive oil, salt and pepper. Now add 4 garlic cloves that are peeled and sliced and toss them in too.

Roast in the oven 20 to 25 minutes, until “crisp-tender and the tips of some of the florets are browned.”

When it’s done, take it out of the oven–and here’s where it gets really good–zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (optional), and 1/3 cup of freshly grated Parmesan cheese. And an optional 2 Tbs julienned fresh basil.



Now I hated broccoli but I will happily eat an entire head of it cooked like this!

Yes roasted veg is the way to go ,much tastier than boiled.
It's the only way to get the boy (23yr old) to eat veg.

Ha! A similar statement was made by my Wife about her boys one's 18 months, the other one (me!) is 33!

Just don't go too heavy on the lemon juice. It can overpower everything.

I'm not sure I want you making videos for my wife wink (This has gone spectacularly of topic!)

To be clear (hehe) the explaining was on my part, on why I am filming myself tossing broccoli for a man I met on the internet...

I love green veg but out of habit it's boiled/steamed and that is it. I'm going to give this a try sounds nice (minus the nuts).

Good point, thats 2.5 kg! hehe

I just use one head of it and that's enough for two.

Am I misunderstanding?

What good would throwing a clove of garlic into the bottom of a baking tray cooking a load of broccoli?

I think so.

Chop it and then I find it sticks to the florets when you toss it all together.

It'll 'infuse'.


Broccoli was discussed at work today, the consensus was that isn't really liked. This, however, does sound good, might give it try over the weekend.

This week I have been mostly roasting Sweet Potato in wedges, salt and peppered, or Cajun spiced, and drizzled in Olive Oil...and then in the last ten minutes adding some sliced Chorizo. It has been nice.

I like the sound of the sweet potato and chorizo.

Definitely give the broccoli a try, it's seriously good!
