Yup. They say it's all the rage in Paris to combine the two. My question is what fish would be best to put with bone marrow? Open to suggestions. I was thinking halibut or salmon.

Not sure about salmon. Something white and meaty,maybe monkfish?

I'm not convinced by salmon either. Too strongly flavoured and oily.

A meaty white fish for me (checking OP's location I'd suggest blue cod or orange roughy) with a parsley, caper and lemon salad.

I bought halibut but frustratingly missed the monk fish that was right behind it and bought some rock cod instead. San francisco has a variety of fish although not a big fish market like I would prefer.

Skate or ray wing would work well. seen it served successfully with meat juices.

Turbot and marrow go well, but decent Turbot is very expensive
