My Dad will be retiring in the non too distant future, and I am looking at option that do not include the usual euro diesel boredom box... E.g. Volvo s60 or 530d.... Yawn.....

the parameters of this search are

Coupe,
Serious engine
Grand tourer
Le Mans 24 tour worthy
Minimal depreciation, mileage will be tiny...
Something you want to polish on a Sunday morning, just because
Something you drive to get the paper, just because....
Can get in it and drive to the south of France on a whim
No BMW or Porsche...
He loves Astons, but they are out of budget.....

Latest shape XK would be my choice. Alternatively, I'd be looking at a Merc CL55AMG (or SL55AMG if he can do without rear seats) or a Maserati 4200, although the servicing on the Maser may be a little rich

mmmm, xkrs are rather cheap for the amount of car you get.

Dare I say the Maserati Gransport, you see good ones for 25k, little over budget but rather awsome.

Not sure that 'tiny mileage' and 'Grand Tourer' are going to go well together. An engine which will effortlessly power you to Monte won't be too happy if allthat is expected of it is a daily trip to the paper shop or the weekly supermarket shop.

Whatever, the chances are that he will outlast it.

How about the best xjs you can find,get one ofvthe run out 4.0 celebration drop tops and you have a well developed,reliable appreciating asset.

On a similar vein if mileage is low then buy an intercepter and get it gas converted if need be.
