What car - Change of tack

Hi all. Apologies for a second 'give me your ideas' thread in as many months, but a few changes in personal situation have meant that needs have changed to accomodate...
Things got a little more complicated, and I'm struggling to see a perfect fit here.
Ideally, I will need a car to do the following:
- Cost £7k at most
- Hold four adults and weekend baggage comfortably (think long journeys)
- Cruise at 90-100 in comfort (where laws allow)
- Have some 'modern' creature comforts (aircon as a minimum, the more the better)
- No distinction on body type, but access to the back must be reasonable (i.e. coupes with long doors, or 4/5dr cars)
- Will consider manual, auto or semi-auto
- Be fun to be hustled along on a country road
- Have a reasonable turn of pace
To be honest, I think I'm probably going to end up going down the B6 S4 or Impreza/Lancer route, as I just can't think of anything else that really lights my fire for the budget. Please throw in any ideas you can think of, otherwise I'm going to be toddling off to sort out a few test drives in the above.
