OK so would like to get a 60's/70's (maybe very early 80's) classic, I don't really know what though. I'd like it to be rally inspired, hatch or saloon. Something that looks just as good parked up with mud and dust as it doesn't after a couple of hours worth of washing and polishing. Budget around £5k-£10k. Any ideas?

Just get an Escort. You'll never be poor again.

Early 70 - 75 Opel Manta
Fiat 131 2000 Sport
Dolly Sprint (as above)
mid 80s Corolla coupe (16V 1600 twin-cam and lsd standard - that has to rival a Mk1 RS1600)
Alfa GTV (expect trouble)
BMW 323 (- imagine a classic early 323 being a poor man's Escort!!!)

Any of these would look great with some period circuit-racing road-saloon detailing

I presume the OP is saying poor man's escort as there is a not inconsequential 'scene tax' on RWD escorts and double or triple scene taxes on RS etc
