I'm recreating this on behalf of rabbitonagain, we assume you meant to raise a normal thread but you've raised a wiki.

So here is your original opening post

"Yes, I have the supreme pleasure this year of cooking for not only 3 down-to-earth good carnivores who will scoff my succulent turkey, chipolatas wrapped in bacon, and stuffing (sage, onion, sausage meat, apple and chestnut). Served with hogback roast potatoes, carbonnade of leeks, rosemary carrots, roast parsnips and mixed roast veg and compulsory sprouts(with bacon and maple syrup). Choice of Apricot and Brandy sauce or Turkey, Port, red wine, wild mushroom and cranberry sauce.

Butttttttttttttttttttt I have to cook a vegetarian main course roast for 3. I have no idea what to do. (I have spoken to these ingrates and they don't want pasta involved but don't mind if I use some stuff like "quorn" (which I know little about).

Can anyone suggest some good ideas (yes I know shooting them is one option) or recipes based around micoprotien like quorn? Being quite a good cook I want to produce something fairly good - not some boring old nut roast!

Easy! They can have :

Hogback roast potatoes, carbonnade of leeks, rosemary carrots, roast parsnips and mixed roast veg and compulsory sprouts. Apricot and Brandy sauce.

That way there's no extra cooking required, and if they complain just tell them that if they want to save the "ickle furry animals", then they have to make some sacrifices.

Vegetarians always have a choice at my house. They can make do, or fk off. biggrin

a gratin is a decent veggie main course to have with sides.

can be made in advance and whacked in the oven fairly simply, too.

I've been veggie for over 20 years now, and we normally have a nut roast at Christmas. Buy a kit from Holland and Barrett, make it up as per instructions, but then put a layer of goats cheese in the middle or wrap in pastry before roasting. Or go mad and do both...

Serve with all the normal veggies as long as the roasts are done in olive oil or Trex and not animal fat. This will mean they roast at a slightly lower temp so may not be quite as crunchy as normal.

I generally have:

Starter: Carrot & Corriander soup
Main: GIANT Yorkshire Pud filled with mash, roast tatoes, veg and lashings of onion & red wine gravy.
Dessert: Creme brulee

So it sort of feels like a christmas dinner but is veggie based.

It's lush yum
