Any good recipes?

I've made it quite a few times but I'm open to suggestions. I'm thinking fried egg on top rather than a scramble.

Who the hell puts scrambled egg on nasty goreng ;-)

Local staple dish in every food court and hawker center here, will dig out a few traditional Malay recipes for you a bit later!

When my Malaysian friend made it he used to fry the egg in a pan, ripping it and shredding it with a spatula as he went. The stuff he finished with was fluffy, light and slightly crisp on the outside. It would have been lovely with a fried rice.

Coincidentally I had a craving for this yesterday & made a variation (based on what I had in the cupboard) on Rick Steins one for dinner:

- Stirfry chicken and prawns for a bit
- Add shallot, garlic & chilli. Stirfry a bit longer
- Add spice paste and cooked rice & fry a bit longer
- Add green pepper, kecap manis, soy sauce, tomato puree, fry a bit longer
- turn off the heat, stir in spring onions

spice paste: cashew nuts, peppercorns, ginger, garlic, shallot, chilli, turmeric, nutmeg, palm sugar, oil.

Top it with a fried egg or 2. When you smash the yoke it adds sauce. Lovely MMMMMMMMMMM

In Jakarta, it is often served with a fried egg, a chicken satay skewer and a massive prawn cracker.

It's in my top ten without a doubt.

Ahh fried rice smile Many variations of it - malay version tend to favour fried egg whilst chinese version tend to mix the egg in (Cantonese Fried Rice etc).

One tip is to use Thai Jasmine rice that's been left overnight (or a few hours to cool) in the rice cooker (do not refrigerate).
