Keep it, or drink it?

I managed to acquire a rather nice 1999 Pol Roger cuvée Winston Churchill. Part of me says "drink it you fool", another part of me says "it can only improve with time, keep it you fool". Which part do I listen to?

If you don't have a proper cellar then you're more likely to ruin it, rather than improve it. Get some good friends around for a nice meal and get it drunk.

I do have the loan of a proper cellar for some of my finer alcoholic acquisitions. There in lies the dilemma.

I had a bottle of this to celebrate my 40th last month. It is absolutely delicious, and you certainly won't be disappointed if you try it now, but I suspect there's still a bit more evolution to come with bottle aging, and I think it may improve a little further.

So, if you do have access to a proper cellar, I would be inclined to lay it down for another 4 or 5 years.

Whatever you decide, I hope you enjoy it; I thought it one of the finest champagnes I've ever tasted.

I necked one of these last year. It was bloody lovely. I think I'll try to get my mits on another one, I'll keep one, and drink one
