Went in Feb, hoping to go back over Christmas!...
TBH it's small enough to just go whever the mood/ craving for a particular cuisine takes you - I can't say I had a disappointing meal anywhere!
There's a place called 'Upstairs' which is the only restaurant I recall offering (much as I hate the phrase) 'fine dining'. As one would expect, it's a little pricier than most (probably 20-30quid a head!) but worth the extra money...
The place I actually enjoyed the most is a predominantly sea-food restaurant called 'Hedra' - it's above the big bar called 'Tamr Henna' in the square, which is where all the locals (families included) tend to congregate and eat... Didn't look great from the outside but we went back a couple of times as the staff were pleasant, food was great and it was nice and relaxing... I remember eating a whopping great Sea Bass with all the trimmings for that came in for less than a tenner!
Tamr Henna itself is a nice place to snack and watch the world go by - if you don't mind things a little more rustic.
The White Elephant Thai was good too - not amazing but satisfied a pang for Thai!... As for the marina area, it was pretty dead at night when we went, but the Captain's Inn did a fab steak sandwich for lunch (though the Russian yachting girls may contributed to my enjoyment of those particular lunches!
)
The Sheraton's lovely, and a good move on not going A/I IMHO - El Gouna's one of those places where I get the impression A/I is geared towards folk who don't really like food/ venturing out of the hotel!
(ETA names of places now I've had the time to recall them!
)

El gouna is a self contained resort with security , so you wont get usual beach / peddlers
http://www.elgouna.com/pdf/El%20Gouna%20Master%20P...
Sheraton is a nice hotel good beaches , good restaurants down at the Marina , for good steaks the Captains bar , several seafood restaurants they also have a duty free shop in the Marina where you can buy duty free ..you have to visit within 48hrs with plane ticket / passport usefull if you want cheap bottle of Scotch and are not AI .
Another good beach is Budda ...good for kite surfing , boat trips , diving etc.
Downtown few more restaurants , nightlife , Water taxi service or hire a boat
Also a delivery beer / wine service "cheers" bar
Good go karting circuit ...."I got the lap record last year !!
cheapo transport service buy a week shuttle bus pass at Orascom office ...about 50p a journey .
If you want to sell your wife for a camel or visit typical Egyptian Market / Nightlife visit Hurghada they also have a modern shopping complex / supermarket ..Senzo Mall
more info here , list of all restaurants/ services in the back

Stayed their last December, a very quiet place.
Even if you have transfers i would cancel and use a taxi, saves waiting and multi drops.
If you like a nightcap you can only buy alcohol at the duty free shop.
Local transport is in Tuk-Tuks, 50LE anywhere in resort, great laugh.
If its still there you could hire 'Segways' for a tour great experience.
Most the prices are in Euros so don't bother with more than a few LE.
