Recipe idea help needed

Apologies for the long windedness but I want to explain what I am trying to do. (And I have never posted in this section before so go easy on me I am no Nigella)

I challenged myself at the beginning of last week in the kitchen department by buying a veg box, a fruit box, some salmon and decided that was all I have to live on for two weeks, I added philly, chopped tomatoes and eggs and general condiments (inc flour) to the list of things I was allowed to eat.

Reasons I did this? Make myself be more creative and learn to do more cooking, to reduce general waste inc packaging, to eat healthier, and also see how low I could get my food bill

So far I have made, fish pie, veg soup, casserole, omelettes, jacket potatoes. Not that inventive.

But I am now in week two running out of ideas and supplies and I really hate failing at my challenges

This is what I have left:

A lot of cabbage and cauliflower, potatoes, 1 parsnip, some carrots, an onion, some unidentifiable fruit, salmon, eggs and half a tub of philly (and the condiments)

Any ideas? Could I make some sort of fish/veg cake?

I think next week I will go with turkey instead of fish, more recipe friendly.

Thanks but I have waded through many sites like that but obviously being quite specific on the ingredients, other than fish it isn't that easier. I have even found sites that you could input what ingredients you have and they will suggest a recipe but they either didn't work or there isn't any meals left without taking some serious artistic licence

You're in trouble there!

Cabbage, carrots, onions (+ mayo) is a basic coleslaw. Could go with a bit of baked salmon.
Other than that you've got boiled eggs and baked potatoes/mash/chips.

Think fishy mash could be on the menu!

How about bubble and squeak? You could make a batter for the salmon or the veg tempura style and fishcakes as you mention, need breadcrumbs though really..

Fantastic ideas. Definitely will do bubble and squeak, will do a bit more research on the Veg Tempura, as for the fish cakes this was a the recipe I was going to take artistic licence with, no breadcrumbs?

Salmon fish cakes with a poached egg on top would be simple and nice.

Boil the potatoes, add the salmon to this a couple of minutes before the potatoes are done. Drain and roughly mash/crush. Season to taste and add a herb like dill or parsley if you have them. Fashion into fish cakes and stick in the fridge for a bit. simply shallow fry in butter when you're ready to use them to give colour and warm through.

You could pimp them up by adding curry powder to the mix but that's up to you depending on your taste. Poach a couple of eggs and serve these on top.

Would be nice with a little side salad but as you didn't mention that....?

Oh yeah! But with breadcrumbs? I was just going to mash it all together but that could be another way, I was going to use flour & eggs etc for a more pattie style fishcake.

i can't remember what fish I used for these, probably smoked haddock or something, but salmon would work equally well.

Do you have soy sauce and honey? You could mix the two and marinade the salmon in it creating a sort of teriyaki style dish. Served with steamed cabbage and quick stirfry of onions and carrots and stuff.

Oh yes thanks for that, will do that one.

No, no salad frown I told the woman where I bought the Veg and fruit box from they need a salad box and she actually said that was a great idea and see what they could do. I could buy salad as well next week though if they don't.

The challenge is a working progress and based on my much bigger challenge of creating the perfect diet (for me) that, in Einstein’s fashion sense kind of way, I would just repeat.

No but I have a bunch of random sauces that I reckon I could mix with the philly melted to make a sauce for a stir fry scratchchin

Absolutely! I have never been interested in cooking before but the idea of making stuff up has really tapped into my creative side, before I would stick to things religiously and if I didn't have an ingredient I wouldn't bother.

You should have tasted the marmite/steak sauce/chilli sauce/philly/about ten other random things I found meatball sauce I made couple of weeks ago - it was amazing!

Hopefully I shall be posting more in this section as I get into the swing of things.

If we are doing pics for inspiration here is my first attempt at fish cakes and I am not great in the kitchen.

Could you give the cabage a light steam and finish off in the wok with the other stir fry ingredients?

Any combination of those veg will work well as bubble & squeak, my preferred way to do it is to make small cakes from it then shallow fry.
