Well I know there are a few similar threads going but one is asking about a very budget entry field, the other about a 350+BHP higher end version.
I currently have this VTR

I'm looking for something with a bit more torque.
I'm thinking
Early Audi S3
Clio 182 cup
Mini Cooper S (works if possible)
Pug 206 GTI
I have a Z3 Coupe too so even considering a Z3 2.8
Budget £1500 - 2000
All ideas welcome

Actually I bet a Saxo VTS would be quicker than the old Golfs and Polos, even the R32 mark 4 Golf!
I forgot about those early S3's. Still, the cheapest I can find on autotrader is £2.5k and that's the bottom of the pile.
Also, 182 is actually an option to my surprise. I've only ever looked at the Trophy's before.
Are you going to be using the car for everyday use aswell? Insurance is often a dealbreaker, especially with older cars. E.g. a Twingo RS is alot cheaper to insure than a C2 VTS even though the Twingo has more bhp. Try some quotes.
I'm looking at a new car too, I dunno whether to go for the Twingo or bite the bullet and go for a clio 182. It'll be a lot more costly for older technology though :/

Friend of mine took his 172 Clio Cup round Cadwell, uprated disks, pads, 888's, Eibach Sportline springs and a geometry setup, was really surprising how good it was in the twistys and it wasn't exactly slow on the straights.
Alot of fun for a lightly breathed on, relatively cheap hothatch!
Also only used 3/4 of a tank of fuel all day and had a lot of use.
Bargain all rounder in my opinion!

Go for a Ph1 172. I've had mine just over 4 years. I've done 18 trackdays in it and its never missed a beat. I drive it to the track and back no matter where in the country it is.. I've put Brembo HC front discs on it DS2500 pads all round, braided lines and DOT 5.1 fluid. K Tec engine mountings and Powerflex dogbone bush. 172 air box, remap at RS Tuning and Scorpion stainless cat-back system. Toyo R1-R tyres. Its got 129,000 miles on it and its as sharp now as when it was new. I've had so much fun with it and intend to keep it for many years.

Great cars, but they need substantial upgrades for proper track use, due to being very front-end heavy and giving away about 200kg overall to something like a VTS/172. Can be costly to run, especially if used hard on track. Fiat coupe LE. It's a 20v 2.0L turbo 0-60 in 6.5secs 6 gears and still a looker even today. Saw one day before yesterday. There's 8 on autotrader, most under 2k.
Fast, make a good noice and have a nice interior though. Not really a hot-hatch competitor, more of a "GT" feel to them in my view.

Holy Thread Revival!
Well the Saxo has been sold and I'm itching to get a new, more powerful track day car, road legal (just is fine).
Only real criteria is that it must be better than my VTR, that is a challenge - I loved that car and it gave plenty of much more expensive cars a real shock.
Thinking of the clios as discussed before.

The fiat coupe, I've always liked them, although the turbo is about x3 more expensive than the non-turbo.

Been looking at a few 206 GTI 180, they are quite tempting.

My original plan was to take my Swift Sport to my first one, then sell it and get either an NC MX-5 or Clio RS 200 Cup 2.0 and track that.
However, I've just realized what if I totally write off one of these cars on track? That could be bye-bye to 8 grand. Gaping hole in my plans.
OP, how valuable a car would you be prepared to lose in the possible circumstance where you get in a serious crash and your car is basically demolished?
