Can you setup a variable direct debit online or do you have to sign a form?

I want to arrange online to pay a monthly charge using the charging company's account and sort code details.

Presumably I just need to let the company know my sort code and account details after I've set up the mandate online?

Or will the company be notified automatically and then be able to claim monies to be paid every month without me doing anything else?

You don't need to do anything online. Just complete the DD mandate form and send it to the other party. They'll do everything at their end.

Thanks - I know that but it would be much simpler for me to tell my bank to do it online.

Seems you can't do that for some reason.

The bank has to receive a written request from the third party.

As I understand it a Direct Debit is variable and instigated by a 3rd party. The value can change upon written notification to you from the 3rd party.

Setting up a payment with your bank is normally a Standing Order and normally can be set up online just like an online payment.
