I'm desperately trying to make some outlined letters but can't seem to do it with some. S & E spring to mind.

Am I missing something or is it not possible?

I'm trying to recreate as pictures below:

It's possible, just highly difficult.

With some letters it's a case of apply letter in the outline colour, and then apply a slightly smaller letter inside the other one, same colour as the base underneath.

Others it's a PITA because the above doesn't work.

Yeah, you have to Apply the outline layer, and then build up the internal layers to achieve it.

Quick way is take the letter, then copy it 5 times, now using the first four letters move them one at a time +1 / +1, +1 / -1, -1 / -1 and -1 / +1 on the X&Y position settings. Now change the colour of the 5 letter to whatever you want...instant outline. (can get a bit fiddly with some letters and needs extra base layers to fill)

Sidoarb's way is best, but it does leave some rough edges. I write out the word in the font then outline it with thin lines then delete the background letters, it takes a lot longer but you can place it on metallic colours. Do tye S' and C's with really small pieces to fit the curves.
