We had this for Christmas dinner as not mad on turkey.
6 squeezed oranges and 1 table spoon of castor sugar or more to taste depending on sweetness of oranges.
Table spoon of cointreau optional.
Add heaped tablespoon of cornflower to water in separate saucepan and then add this mix to orange sauce to thicken.
This produced about a half pint which was plenty for 5.
Simple and tasty.
Don't forget the potato stuffing to absorb those lovely juices!
Boil potatoes then mash. Dice two white onions and lots of black pepper and mix. Cover in cling film. After duck has been cooking for 2 hours, extract brown juices from roasting dish with "baster" and add to mashed potato and taste. Then add diced onions. Transfer to casserole dish and cook for 50 mins adding more of the juices if required. NB do not add the clear fatty juice to the mashed potato. You should also add the neck and giblets to the roasting dish to add to the brown juices. I add these half way through the cooking process as they dry out. Season as required.
I am assuming your duck is a quality bird as otherwise you may have to remove some of the excess fat dring your cleaning process.
If you're feeling really brave, you could also stuff the duck with this mix.
I am not a chef but Mrs B is a good cook.
