Which one are you going to?
We've done Longleat many, many times. CP tends to divide opinion but I like it - nice to just ditch the car for a few days and relax. Longleat is well spread out whereas others centralise everything in a single area and make things feel more cramped from conversations I've had with people who have done both.
Definitely go for a refurbished villa; the old ones are quite tired now.

Until very recently I lived very close by there and had relatives who worked there. Used to go and play on the quads and visit the spa.
3 year olds will probably love the pool. You can hire bikes if you're not taking your own, I presume little ones with stabilisors or trailors for bike bikes will be available.
Lots of the activities cost extra.
If you get chance for a wander about, it's worth heading to Pooley Bridge and driving alongside Ullswater, over Kirkstone Pass and dropping down into Ambleside.

(Took our 2yo (and 8mo) to the Elveden one just before xmas. Plenty there to keep him entertained.
Spent loads of time in the pool, which he loved. The kids pool area was a bit "meh" but he loved going on the bigger slides with me, and the big pool when the waves were on.
They allow early access to the pool on some days for parents with youngsters, so you can get in before the crowds.
Booked him into the soft play type activities each afternoon for a few quid a time.
He mainly enjoyed just being able to run around lots, we did plenty of walking.
We've stayed at all of them except Longleat now, and the Lake District is my favourite.
Hints:
Take your own food and booze, the onsite supermarket and takeaways are expensive.
On your last day, bring your car round to your villa early.
Take a torch, it gets very dark in the more outlying areas.
