My wife makes Christmas cakes

Starts them in early November, feeds them brandy for 6-7 weeks then marzipans and ices them a few days before the celebrations start

They taste better now than they did on the day

The reason is to clear the pallette so that you can enjoy every mouthful of the cake to the max apparently.

Yup. Lancashire will do at a push.

Very regional habit though - I get funny looks when adding Wensleydale with most people!

Cheddar is the right stuff. And the cheese should be eaten with the cake, i.e. each mouthful contains some of each.
